Puerh teas are fully oxidized teas which are unique in that they are aged – an attribute which is quite contrary to most tea production which values freshness above all. All Puerhs, whether green or black, are produced from special large-leaved tea plants that are inherent to the Yunnan Province in Southwestern China. The process for making this varietal includes sun-drying followed by pile-fermentation in caves for periods which can be measured in terms of years. The effect of this aging can be detected in both the taste and the properties of this wonderful tea type.

According to researchers in China the intrinsic properties of Puerh teas are very helpful in helping the drinker to metabolize fats in the foods that they consume. They are also very settling to one’s stomach, and are an excellent detoxifying agent. For these reasons and more, the Chinese have used Puerh tea as a digestive after their meals for over 1700 years.
