This is a rare, yellow tea of exceptional quality. The yellow teas find their niche in between white and green teas on the oxidation/caffeine spectrum in their production. The leaves are treated to kill the enzyme, and then the damp leaf is packed and allowed to cook for a couple of days at 106 degrees F. Then it is dried. The result is nothing but great tea.
