As we welcome the autumn weather, many tea lovers trade in their iced teas for something more substantial -- something that will keep them warm from the inside out. Our suggestion for people of like mind is some authentic Indian chai. "Chai" is simply the Indian word for "tea", but it signifies a style of tea drinking as much as it does the leaf itself. Our authentic loose-leaf chai blends contain a base of rich Assam black teas, artfully combined with exotic spices for a sensational taste treat. Try preparing these blends in the authentic manner, as described in the following recipes, for a true sample of everyday Indian tea drinking.
Loose Leaf Chai Instructions
1.5 Litre Batch
- Add 12 tsp (1 oz) Chai leaf to 7 cups of hot water in a saucepan on a stovetop
- Bring to a boil and then simmer for 5 minutes
- Add 6 Tbsp sugar (preferably brown crystal sugar) and 1 cup of milk (preferably whole) – heat through (1/2 to 1 minute), strain and serve.
12 oz Cup
- Heat a combination of 2 oz whole milk and 12 oz water to a boil
- Add 3 tsp Chai leaf and 4 tsp sugar to your brewing vessel
- Pour hot milk/water mixture over leaf and sugar and steep for 5 minutes. Remove leaf and enjoy!
Authentic Indian Chai and Rock Sugar
Organic 500 Mile Chai - This "Northern India" inspired house chai leans to a richer cinnamon/clove blend. The tale of a 500 mile chai originates from the many late night truck drivers stopping at small chai stands along India's highways asking for a very strong and sweet brew to help them drive long distances ("for another 500 miles"). Brown Crystal Sugar - Europeans consider brown crystal sugar the ideal sweetener for premium loose-leaf teas. A few pieces of this unrefined crystal sugar, added to your teapot while your leaves are steeping, will result in a wonderfully balanced and lightly sweetened infusion. Organic Golden Puerh -

Milk Oolong -
This semi-oxidized tea varietal has a very distinctive "buttery" characteristic to its liquor that is the result of a unique combination of harvest-timing coupled with processing technique. The leaves are selected from tea plants growing in the mountains of Fujian province, China at elevations between 1600 and 4000 feet above sea-level. The plucking must then occur only on a morning following a precipitous drop in temperature in comparison to the day before. The hand-picked leaves are then removed to the tea factory where they are carefully oxidized in climate controlled rooms, steamed and rolled, then dried and packed for the enjoyment of the lucky few tea enthusiasts that have access to this rare treat. Ceylon Silver Striped -
A stunning and extremely rare Sri Lankan black tea that has beautiful silver-haired tea leaf buds exhibiting a level of skill and artistry in the manufacturing process rarely seen outside of China. The aroma is rich and sweet and the delicate flavor is smooth and refreshing.
